Mary holds nearly 3,800 pounds of sauce at a time, combining 36 cases of sauce with the oil, spices, water, and ingredients that bring everything together. Producing one larger batch allows us to maintain the same flavor and consistency across every tomato pie made from it.![]()

The entire system is enclosed in stainless steel for a cleaner and more sanitary process, with an added magnetic separator in place as another layer of safety. Once the sauce is ready, it is pumped directly from Mary into our custom sauce depositor.![]()

From there, every tomato pie receives a precisely measured amount of sauce through a full rectangular depositing head designed specifically for our pies. Two even applications provide complete coverage from edge to edge, with no dry spots and no areas overwhelmed by sauce.![]()

Every part of this one of a kind system was customized around the product our community has known and loved for generations. The equipment may be new, but the goal remains exactly the same: making sure the tomato pie you enjoy today tastes just as good as the one you remember.![]()
